Rhubarb - Proposition review and site evaluation


About the brand

Rhubarb was established in 1996 and has grown to become a bespoke international food and drink group catering for events, venues and contracts, as well as a portfolio of stand-alone restaurants, cafes and bars.


The Challenge/Task

Over the course of Rhubarb’s expansion, the company has required an objective evaluation of its new propositions and potential sites. Pragma has worked on evaluating Sky Garden in the Walkie Talkie building and Pilot’s Bar in Heathrow, to provide reassurance of feasibility and recommendations for successful execution of the proposition.

What we did

Pragma has used catchment analysis, trading data analysis, consumer research and a programme of detailed audits to the site and vicinity to:

  • Model revenue potential and feasibility

  • Evaluate the suitability of the new concept to the target audience

  • Assess the competitive landscape

  • Provide recommendations for competitive advantage and improvements to the proposition

The Result

Both concepts opened successfully, with tweaks to the proposition made following Pragma’s recommendations. Rhubarb is now developing a new high-profile proposition which Pragma evaluated, and which is set to open in London in 2017.
